Cardamom Coffee Popsicles

Yes sir! You read absolutely right. It's cardamom, and coffee, and in a cooling popsicle form. You're welcome.

I love cardamom coffee. In my mind it's the cousin to the Indian staple masala chai, and since I love all things spice, definitely a favourite in our household for those grey winter mornings. But, summer is a different story. While I still need my early morning cuppa joe, I rarely ever feel for the hot steam during those sultry months. The answer? These cooling coffee flavoured popsicles with hint of cardamom and creaminess from condensed milk! Think a frozen iced latte, only yummier.

Forget the skinny summer frozen treats, and dig into one of these today. You will not regret it.

Ingredients

3 cups whole milk

1 cup heavy cream

1/2 cup water

3 heaped tablespoons instant coffee - I used Nescafe (reduce to 2-2.5 tbsp if you don't enjoy a very strong coffee flavour)

6-8 tablespoons sweetened condensed milk (add another tablespoon if you prefer it sweeter)

6 green cardamom pods, crushed

PS- Both coffee and cardamom flavours tend to intensify overnight, so make sure you adjust the levels according to taste.

In a deep pot, mix the milk, cream, water, cardamom and bring to a simmer. Do not let it boil. Once hot, add the condensed milk and bring to a second simmer. Continue to simmer for 5-6 minutes. Remove from heat and stir in the coffee. Cover the pot and let the cardamom infuse for 10-15 minutes. Once the mixture has cooled a little, strain and pour into moulds. 

Freeze overnight, lick away, and don't forget to wipe off those coffee stains ;)
